A delicious chicken dinner. Chicken bites seasoned with smoked paprika and rolled in a garlicky butter sauce, with some chili for added sting.
For two you’ll need 330 g chicken fillets in pieces, 3 tbsp butter, olive oil, 4 cloves of garlic, 1 tsp powdered smoked paprika, 1/2 tsp chili flakes, the juice of 1/2 lemon, 2 tbsp chopped fresh coriander, salt and black pepper to taste.
Pat the chicken fillets dry and cut them into bite sized pieces.
Season the chicken on all sides with the smoked paprika and salt and pepper to taste.
Heat the olive oil in a skillet on medium high and melt 1 tbsp of butter in it. Add the chicken and cook for 3-4 minutes until golden brown and cooked through, then remove it from the pan and set aside.
Lower the heat to low medium and melt the remaining butter in the skillet. Add garlic and sauté until fragrant, 1 minute or less.
Return the chicken to the pan and add the chili flakes. Toss until combined.
Remove from the heat, add the lemon juice and toss again. Let the lemon juice reduce very slightly on the residual heat, then sprinkle with the chopped coriander and give it a final toss.
Serve with rice or just a salad.
