A mix of roasted vegetables and fried Halloumi cheese that complements each other perfectly.

For three you’ll need 300-400 grams of Halloumi cheese, 2 zucchinis, 2 bell peppers, 2 red onions, 150 g cherry tomatoes, 3 cloves of garlic, 1 tsp dried thyme, 1 tsp dried oregano, olive oil, salt and black pepper.

Heat the oven to 200° C.

Chop and slice the zucchini, bell pepper and red onion. Place the chopped vegetables in a bowl and add enough extra virgin olive oil to coat the vegetables; around 5-6 tbsps, add the pressed garlic, thyme and oregano as well as salt and ground black pepper to taste. Toss to cover the vegetables evenly.

Place the vegetables on a baking plate and roast them in the oven for approximately 35 minutes, turning them once.

When the vegetables are done remove them from the oven.

Slice the Halloumi cheese, and heat some olive oil in a skillet on medium high.

Fry the Halloumi quickly on both sides to brown it, then place the pieces on top of the vegetables.

Serve with a side of Tzatziki and bread.
