A sandwich with a thick fillet of pickled herring on a bed of parsley, dill and leek. The seasoned herring combines with the herbs and bread to make a near perfect smørrebrød.

For one sandwich you’ll need one or two slices of sweet rye bread, a fillet of Matjes herring, leek, parsley, dill, capers, 1 red onion, butter, salt and black pepper.

Butter the bread and, depending on the saltiness of the herring, add a pinch of salt; or alternately, leave it for the final topping.

Finely chop the onion and thinly slice the leek. Roughly chop the parsley and dill.

Layer the leek, parsley and dill generously over the bread and place the herring on top. Garnish the herring with the chopped onion, capers and roughly ground black pepper. For a final touch, if even more salt is desired, you can add some flake salt.

Serve the sandwich with a lager beer.

WTF is Matjes Herring?
The name comes from the Dutch Maatjesharing, which means young herring. It’s made from young herring, caught before it reaches full maturity, which ensures a milder taste and tender texture.
The Swedish version, used in this recipe, uses herring pickled with, among other things, pulverised sandalwood and cinnamon.
