There is a danish culinary tradition called smørrebrød, which basically involves combining various ingredients on a slice of bread and serving it with beer or schnaps, for a delicious entrée, lunch or dinner. This is one take on that.
For eight sandwiches you’ll need eight slices of dark ryebread, baked with syrup, 170 g smoked beef, pickled cucumber, tomatoes, a few salad leaves, red onions, 1 heaped tbsp of Dijon mustard, an equal amount of mayonnaise, salt and ground black pepper.
Slice the cucumber, tomatoes and onions.
The onions can be used raw, or lightly caramelised if you prefer a mellower version. If caramelising, heat some olive oil on medium and fry them until they’re browned. When done, remove from the heat.
To make the sauce, add the mayonnaise and mustard and stir until smoothly combined. Add salt and black pepper to taste.
To make the sandwiches, arrange a few salad leaves on a slice, then add two slices of beef, then a few slices of tomato and pickled cucumber. Top with the raw or caramelised onions and drizzle some sauce over the sandwich. Serve with a lager beer.
