A most delicious dish: salmon seared in cast iron with a mixture of mayonnaise and wasabi to dip in. The wasabi and other ingredients add a spiciness almost like Dijon mustard, but with subtle Asian undertones.

For two you’ll need two salmon steaks, olive oil, salt and black pepper.

The Wasabi Aioli needs 4 tbsp mayonnaise, 1 1/2 tsp wasabi paste, 1/2 tsp soy sauce, 2 cloves of garlic, 1/4 tsp sushi vinegar and a small amount of salt.

Stir the ingredients for the wasabi aioli together and add salt to taste.

Pat the salmon steaks dry and season with salt and ground black pepper on both sides.

Heat some olive oil in a cast iron skillet on high, and sear the steaks on both sides until browned and cooked through, maybe two-three minutes or so per side. Remove from the heat and place on plates.

Serve with the wasabi aioli and, for instance, deep fried potatoes and a lager beer, which turned out to be a perfect drink for this dish.
