A salad where the saltiness of the fried Halloumi is offset by the sweetness of the grapes.
For two you’ll need around 250g of Halloumi. Cut the Halloumi into slices, about 1 cm thick.
Slice a bunch of mixed salad leaves. How much? Enough for two. Add the grapes. Cut some fresh thyme and add to the salad. Pour some olive oil over the salad, add salt and pepper and toss.
Pour some olive oil into a frying pan and fry the halloumi on fairly high heat. It should be browned on the outside but not overly melted.
Divide the salad onto plates, add halloumi to each plate and serve with a piece of bread and salted olive oil to dip it in.
Can be served on it’s own as lunch or a light dinner.
