This is a delicious tapas type dish. Lightly fried mushrooms and Serrano ham combine to make a tasty treat well worth trying.
As either dinner for two or light tapas for four to six you’ll need 100 g Serrano ham, 200 g mushrooms, olive oil, 2-3 spring onions, 3 cloves of garlic, 2 tbsp lemon juice, 8-10 strands of fresh thyme, salt and black pepper.
Using pre-cut Serrano ham, slice it length-wise into approximately 2 cm long pieces.
Slice the mushrooms and slice the spring onions. You can use just the green stalk, which I did here, as well as the onion itself. Chop the garlic and thyme slightly larger than fine.
Heat the skillet on high heat and add olive oil to it, then quickly fry the ham. When lightly browned, remove the ham from the skillet.
Turn the heat down to medium, then add the spring onions. Fry for 1 minute, then add the garlic.
When the spring onions are lightly coloring, add the mushrooms and sauté for a few minutes. Add the lemon juice and Serrano ham and sauté for a few minutes more on low heat to let the lemon juice reduce.
When the mushrooms are softened, but not overly fried, add salt and pepper to taste. Sauté a minute or so, then remove from the heat.
Sprinkle the chopped thyme over the mix and serve with freshly baked wheat bread. Add red wine or a lager beer.
