This is a fairly mild yet warming vegetarian dish based on chickpeas, with fresh herbs and added feta cheese. The feta cheese could be omitted for a fully vegan meal.

For four you’ll need 2 cans of chickpeas, 1 can (400 g) crushed tomatoes, 2 bell peppers, 1 onion, 2-3 cloves of garlic, 20 leaves fresh basil, a bundle of fresh thyme, roughly 75 g feta cheese, olive oil,salt and black pepper.

Heat the olive oil in a skillet on medium and fry the onions and peppers until soft. Add the pressed garlic and fry a few minutes more. Then add the chickpeas, crushed tomatoes, basil, thyme, salt and black pepper. Let simmer until the chickpeas have softened.

Chop the onion, bell peppers, basil and thyme finely. leave some of the basil leaves to garnish.

Pour the sauce into a blender and run until smooth. Check the salt and pepper and add if needed.

Pour the sauce back into the skillet or into a serving dish, then crumble the feta into the sauce. Garnish with basil leaves.

Serve with rice or bread.
