One of those side dishes no dinner should be without. There are numerous variations on this theme. This is one of them, with a light olive oil dressing.
You will need:
- Salad, a bunch
- Cherry tomatoes, a heap
- Red spring onions, a balanced amount
- Cucumber, a certain length of
- 1 clove of garlic
- Extra virgin olive oil
- Red wine vinegar
- Salt
- Pepper
Rinse the vegetables in cold water. Cut the salad leaves and halve the cherry tomatoes. Cut the spring onions into slices and quarter the cucumber quickly by cutting a cross lengthwise and then cutting that part into slices.
Mix the ingredients and add the pressed garlic, olive oil and vinegar. Proportion wise there should be about a 4 to 1 oil to vinegar mix. Experiment with various kinds of vinegar for a different taste. Lightly salt and pepper the salad and then toss it to mix all the ingredients.
Serve with just about any dish.
