Another classic. A sauce based on basil that’s great on it’s own for pasta and also works as a condiment for any number of dishes.
To make a batch enough for 4 you’ll need 4.5 dl fresh basil leaves, lightly packed. Roughly 1.5 dl pine nuts, 3 cloves of garlic and about 1.5 dl of both grated Parmesan cheese and olive oil. Salt and pepper to taste.
Place the ingredients and about half of the olive oil into a blender. Run it, pausing to check the consistency. If too dry, keep adding oil until the desired consistency is reached. Add salt and pepper until the desired balance is reached.
Serve with pasta or as an addition to a number of dishes.
If this batch turns out to be more than you need, it can be frozen and used later. It should last several days in the fridge.
